Summer Time

To me nothing says summer time like grillin', and there's nothing like corn grilled in it's husk. Just soak the corn in water for about 10 minutes then throw them directly on the grill. Rotate them from time to time to get even cooking and you'll have perfectly steamed corn in about 15 minutes.

We usually do husk-on grilling too, but this week we tried a different technique from Steven Raichlen. Removed husks, brushed with butter to which we had added chopped garlic and parsley. A very pleasing surprise!
Another great way to do grilled corn is take the husk off, cover highly in olive oil and grill. Once done, slice off the cob. Add lime juice, cilantro and avocado. It's great warm of cold. Best recipe I've round this summer!!!
