Recipes: Tour Pico de Gallo

Ingredients:
1/2 lb tomatoes
2 cloves garlic minced
Juice of one lime
2 oz coarsely chopped cilantro
1/4 large onion diced
1 jalapeno diced (more or less to suit your tastes)
Salt to taste
Several years ago my sister was working in a border town in Texas and she came across this recipe for a quick and easy Pico de gallo. Lately we've been trying to get fresher foods on the road so I've been making guacamole and today I made a little portion of this Pico. Here's my recipe, I hope you enjoy!

Mmm, how I love pico. Joe, make sure you try out the North Market when you are in Columbus next month for some fresh eats. It's right by the venue!

Nice! Pico is a summertime staple here - great with fresh tortillas and grilled fish. Leftovers get mixed into a salad of sweet corn/bell peppers/quinoa. My three year old calls it "sunshine in a bowl". :)
