Recipe: The Best 4 Ingredient Salsa You've Ever Tried (V)


I came up with this salsa recipe on accident after I discovered these chipotle peppers in adobo sauce in my "International" aisle at my groc. They are quite nice and have a smokey flavor that I love. Anyways, I use grape or cherry tomatoes because they are a tad sweeter and that sweetness translates well with the spicy chipotles. Hope you enjoy it as much as I do.

Prep: 2 minutes
Cook Time: 2 minutes

Ingredients:
2 Cloves Peeled Garlic
10oz grape/cherry tomatoes
1/4 oz Kosher Salt
2-4 Chipotle Peppers (depending on your spice preference)

Wash the tomatoes and put them in a blender with the rest of the ingredients. Puree until the desired consistency is met. About 45-60 seconds will do.


It's that easy.

I eat the salsa with chips of course, and also on my eggs in the morning with some cilantro and green onion. Can't beat it.

Hmm, so simple maybe even I can't screw it up. There's a Mexican place near me that has a really smoky chipotle flavor in their salsa and it's a nice change from the ordinary. I'll give this a shot, thanks!

Try roasting the garlic and tomatoes on a griddle, too (this will add a few minutes to your prep time!). Or...use roasted tomatillos instead of tomatoes. You may end up needing a little sugar in the end, but the balance of smoky peppers and piquant tomatillos is awesome. See Rick Bayless for more!

This is very similar to how I do mine, but I toss some cilantro into the chopper as well and use canned tomatos instead of fresh.

Adobo sauce is the bomb! Open the can and what you don't use put on a sheet of wax or parchment paper and freeze for individual peppers and sauce for the future.

I put a frozen chipotle pepper and adobo sauce in my Ramen noodles for a quick lunch.

Great in Chili to!

Peppers in adobo make everything better. I didn't cook with them until this past year, but they livened up so many dishes, I think I'm in love.
